At Hope4Cancer, we take extreme pride in the location of our clinics. To celebrate Hope4Cancer’s home country of Mexico, I want to share this recipe for Mexican Vinaigrette, which adds a nice kick to any salad! Full of healing ingredients like apple cider vinegar, garlic and lemon juice, the added spices may also make this dressing the most interesting part of your meal.
Mexican Vinaigrette Dressing
- 2/3 cup olive oil
- 4 tablespoons apple cider vinegar
- 3 teaspoons fresh-squeezed lemon juice
- 1 clove garlic (diced)
- 1 teaspoon jalapeño (diced)
- 2 dates (pits removed)
- 1 tablespoon fresh cilantro (chopped)
- 1 teaspoon minced onion
- 1/2 teaspoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon sea salt
- Add all ingredients to your blender.
- Blend to a smooth consistency.
- Serve chilled!
