Delicious Dessert Recipe: Green Chia Pudding

From shamrocks and leprechauns to big parades and wearing green, St. Patrick’s Day is a holiday chock-full of traditions, the histories and explanations of which are quite interesting. My favorite tradition, however, has to be eating green.

Before you roll your eyes and think your only options for healthy green eating are salads and green smoothies, let me tempt you with this awesome green chia pudding recipe from Raw Food Recipes. It sneaks in some leafy greens, yes, but it also tastes amazing. It’s full of fiber and is naturally water-rich, which is a fantastic way to keep your GI tract healthy.

So whether you decide to dress up in green and attend a big parade this year, or just have a few of your closest friends over for a low-key celebration, I encourage you to incorporate this dish into your St. Patrick’s Day festivities. You won’t regret it!

Green Chia Pudding


  • 5 medium celery stalks
  • 1 peeled chayote squash or 1 medium cucumber
  • 1 medium apple, red or yellow
  • 1 cup kale
  • 1 inch ginger root, peeled (optional)
  • 3 tablespooons chia seeds
  • ½ medium ripe banana, sliced
  • Toppings: mulberries, dried coconut, organic tahini or other nut/seed butter


  1. Prepare your juice with a slow juicer or whatever you have on hand. Once the juice is ready, take 1 cup of fresh juice and put it in a medium bowl; add the chia seeds and mix well.
  2. Let it sit for 25 minutes or overnight; try to move it once in a while to avoid lumps. Once your chia pudding is thick, top with banana slices and mulberries, and drizzle it with tahini or any other nut/seed butter of choice. You can keep this in the fridge up to a week, but preferably eat it within three days.

  1. Everything is juiced rather than blended? (I’m thinking with Kale will have a lot of waste being juiced rather than blitzed)
